It can be thrown together in a hurry for a special dessert, potluck or bake sale. Chocolate chip cookies collide with cheesecake for a mouthwatering confection.

Chocolate Chip Cheesecake Bars

Several years ago a friend brought these bars to a potluck at my school. I asked her for the recipe and was surprised there were so few ingredients. Kids will have fun assisting you assemble this easy yet decadent treat.

1 tube (16.5 oz) refrigerated chocolate chip cookie dough

1 pkg (8 oz) cream cheese, softened

1/2 cup sugar

1 egg

Preheat oven to 350 degrees. Spray an 8x8-inch glass baking dish with non-stick cooking spray. Divide cookie dough in half. Press half of the cookie dough into the bottom of the dish to form the crust.

In a large bowl, add softened cream cheese, sugar and egg. Use an electric mixer or immersion blender to blend until smooth. Pour over crust. Use fingers to crumble remaining dough over top of the cheesecake filling.

Bake for 35 to 40 minutes or until a toothpick comes out clean. Cool before cutting into square. Cover and refrigerate leftovers.
